apple oatmeal bake


I made this oatmeal bake last night so I have something quick and non-messy  to grab when I’m in a rush.


2 apples – 1 sliced, 1 chopped

1.5 cups milk
1 egg
1 tbsp coconut oil

2 cups old fashioned oats
4 scoops vanilla protein powder
4 tbsp ground flaxseed
1 tbsp chia seeds
1 tsp baking powder
2-3 tbsp cinnamon
sprinkle nutmeg
1/2-3/4 cup coarsely ground nuts (optional)

Line the bottom of pie pan with sliced apples – save remaining – and place in the oven while it pre-heats to 350.
Mix together all wet ingredients. Beat lightly with a fork to get some air in.
Mix together all dry ingredients.
Slowly pour dry ingredients into wet and mix thoroughly.
Add chopped nuts.
Pour mixture into pie pan and top with remaining sliced apples.
Cook at 350 for 35-45 minutes or until set.

I haven’t found a perfect time for this yet – today it was closer to 45.
