easy migas

This is a little random but I have been searching for Spike which was my favorite seasoning growing up for literally months.
I finally found it at the store the other day and so I made one of my childhood favorites for breakfast this morning. It’s called Migas and it is super easy to make. You can add any type of veggies and salsa you want but I kept mine plain and simple like I used to have it as a kid.
Ingredients:
2 small corn tortillas – torn into inch pieces
1 whole egg and 2 egg whites
fat free cheese
assorted veggies/salsa
Directions:
Heat a pan with your choice of oil and once it is warm put the tortillas in.
Whisk egg and whites together.
Cook tortillas until they start to crisp.
*If you are adding veggies do it here.
Pour in eggs and scramble.
Top with cheese, salsa – whatever you want.
I used Spike because that’s the whole reason I made it.
This was perfect after leg day.
