Jamie Eason has a great meatloaf muffin recipe but I wanted to do it a little differently so I played around today and this is what I came up with:
1 package lean ground turkey
1 small onion
1 yellow squash
3 garlic cloves
1 piece whole wheat bread
3 egg whites
2 tbsp mixed seasoning (no salt)
1/4 tsp chili powder
a few shakes of pepper
Mix equal parts
hot sauce of your choice – I used Arizona Gunslinger and
Preheat oven to 350.
I put each veggie and the bread in the food processor separately to finely chop them but I think you could do them all together.
Mix all ingredients together.
Portion into a sprayed muffin tin (12).
Bake for 40 minutes or until done.
*5 minutes before they’re done take them out and brush the sauce on them and put back in to finish.
I had two of them with salad and bell peppers for lunch today.
I made 12 muffins and each one has:
99 calories, 4g fat, 3g carbs, 13g protein.
