I looooove fresh bing cherries and I have been waiting to get them because they have been incredibly expensive where we live. Luckily I found them at Costco on tuesday and I got some. I thought the perfect thing to put them in is my breakfast quinoa bakes I have been loving. I found the original recipe on Healthful Pursuit and just tweaked it a little.
Today I did this:
1/8 cup whole grain uncooked quinoa
1 tbsp old fashioned oats
2 tbsp flaxseed (I was out of Chia seeds so I added an extra of this)
2 tbsp applesauce
1 scoop protein powder (of course)
1/4 cup almond milk
cinnamon to taste
First I cooked the quinoa according to the boiling directions here. I did the 8-10 minutes and then drained the water out.
While it was cooking I whisked together the almond milk and protein powder and then combined all other ingredients in a bowl.
Drop in some cherries, pitted and quartered.
Then I poured in into a microwave safe container and put it on high for 1-1.5 minutes.
For the life of me I cannot figure out how hers stay so pretty because mine explode every time!!
But soooooo good!!
