apple bran muffins


So…after a super long day yesterday I went grocery shopping because we were out of basically everything and I wanted to make some more muffins and no-bake granola. Unfortunately all the bananas were still green at the store so I decided to try apple bran muffins instead. Although I so like them, I think they are missing something, I’m just not sure what. Suggestions?


1 cup wheat bran 

2 tsp baking powder

3 tsp cinnamon 

sprinkle of pumpkin spice 

sprinkle of  nutmeg

2 tbsp ground golden flaxseed

1 tbsp chia seeds

1 ½ cups Kashi® Golden Goodness®** Cereal

1 cup preferred milk – I used fat free

whole egg and 1 egg white

1/4 cup of honey

½ cup  unsweetened applesauce

1 finely diced apple (not peeled)


Preheat oven to 350 degress.

In a large mixing bowl, combine Kashi® Golden Goodness** cereal and milk and let sit to absorb the milk.

While you wait, in a small bowl, stir together wheat bran, baking powder, cinnamon, nutmeg, pumpkin spice, flaxseed and chia seeds.

Add the egg to the cereal and milk and mix well.

Mix in honey and apple sauce.

Mix in chopped apple and walnuts.

Slowly mix in flour mixture until it is all wet.

Spray muffin tin with non-stick spray (I use an olive oil based one).

Fill tins almost to top.

Bake for 25 minutes or until toothpick comes out clean.
